Interning at Custom Choice Cereal means that I learn a lot about celiac disease, gluten intolerance, wheat allergy, the gluten-free diet and the gluten-free food options available in the market. I participated in the Gluten-Free Challenge and experienced first-hand that living gluten-free truly is a challenge. However, I also learned that it is absolutely manageable and does not mean you have to live taste-free!
I wanted to share an interesting research finding with you. Dr. Ross McManus (yepp, he is Irish) from the Trinity College Dublin and his team are investigating the role of specific genes in the development of celiac disease. The goal is to identify better methods for diagnosis and treatment.
So far, they have identified 25-30 genes that are different for celiacs versus non-celiacs. For the more medically inclined people I’ll be more specific: they have localized the region encoding the IL2/IL21 genes on chromosome 4q as contributing to the susceptibility of celiac disease.
What does all this medical talk mean? Knowledge about the reasons why some people suffer from celiac disease while others don’t and localization of the responsible genetics can help in treatment. It’s a long shot but hopefully there will be a breakthrough. In the meantime, you can already create your personal gluten-free cereal to start your days on the right foot!

That’s why she started the blog Peace. Love. Nutrition. Our customized gluten-free cereal fits right in there, and we are therefore very excited that she reviewed her Custom Choice Cereal concoction. No need to tell us – we know what we’re about to say sounds cheesy! But it’s true! It really makes our day when someone lets us know how much they enjoy the gluten-free cereal they created. It is the best proof that we succeed with our mission to bring taste and variety to gluten-free breakfast table! But what Jocelyn says about our customer service comes as the (gluten-free) icing on the cake for us:

It’s not called the Gluten-Free Challenge for nothing! Despite several close calls and unfortunately sleeping through breakfast Saturday morning (which you should never do because it is the most important meal of the day!), I managed to complete the first-ever Gluten-Free Challenge. Thanks to “the gloriously gluten-free cookbook“, a few Internet recipes, and my personal cereal mix, I put together the following delicious meal plan:
- Saturday afternoon: Fajitas with corn tortillas
- Saturday evening: Chicken Tikka Masala over jasmine rice (sadly without the naan)
- Sunday morning: “A Shot of Burnettes” – my blend of cinnamon granola, apples, strawberries, and organic coconut chips. Mix Id: 134CD1
- Sunday afternoon: Leftover fajitas with rice and black beans
- Sunday evening: Pineapple chicken fried rice
Sure, I went a little heavy on the rice dishes but it’s such a versatile base. My Italian side however was in shock at being denied pasta for so long! It took more effort than I thought to stay gluten-free simply because I could have gone for bagels, pasta, ice cream, etc. at any time. While I’m fortunate enough to enjoy that luxury, I can now confirm that living gluten-free does not mean that you have to live taste free! I’m looking forward to taking on more gluten-free challenges throughout the summer and finding out how I can better serve you, the loyal Custom Choice Cereal fans out there. Greetings everyone! My name is Chris and I’m proud to say that I’ve recently joined Custom Choice Cereal as a summer intern. I simply couldn’t pass up the opportunity to join such a unique and passionate company. A few things about myself: I’m a senior at the University of North Carolina at Chapel Hill majoring in Business Administration at the Kenan-Flagler Business School. I’m a self diagnosed basketball and football fanatic, future world traveler, and believe it or not, I love to cook as well.
While I am not intolerant to gluten, I have accepted the gluten-free challenge which takes place this weekend. I hope this will not only help me understand the gluten-free lifestyle but also the options currently available to the celiac community (and how we can better serve you!). It will also be a source of inspiration for new recipes and a great way to see how my new diet affects my athletic performance. I have already designed my own cereal so at least I’ll have my breakfast and snacks covered! I’ll be back next week to share how I (hopefully) completed the challenge and encourage you to share your experience with us as well.
